The viticulture
Our viticulture is entirely artisanal, natural and biodynamic. We planted our vineyards using traditional methods, especially high density planting, massale selection and old, lower yielding rootstocks as well as the Gobelet Languedocien pruning system. We only cultivate the native grape varieties of the region: Grenache, Carignan, Mourvèdre, Syrah and Cinsault.
The sheep manure and grape marc compost that we produce ourselves and the tillage are conducive to the deep rooting of the vines. We use biodynamic preparations to promote soil vitality and rooting, as well as plant development and the vines' natural resistance to diseases. We limit treatments to the strict minimum, using only sulfur, a very small amount of copper as well as herbal teas. All these farming practices make it possible to harvest healthy grapes, promote tannic maturity and preserve the freshness of our wines.
We harvest very low yields of 25-30 hectoliters per hectare on average. The harvest and grape sorting are done entirely by hand.
The seasons
The work in our vineyards is determined by the seasons. It begins in December. At that time, the vegetative cycle of the vine is in a state of hibernation. During the winter months until March, the pruning of the vine stocks...
Biodynamics
Biodynamic agriculture goes back to Rudolf Steiner (1861-1925). In 1924 in Koberwitz, Germany, he gave the «Agriculture Course» in front of 60 farmers. For six days, he explained a holistic view of agriculture and, based on that, recommended...
The harvest
We usually start the harvest around September 10th and continue until the first week of October. The ripening dates of the five grape varieties we grow are very different. Syrah and Cinsault are always the first varieties...
